Slow Cooked Tomato Sauce
Ahh tomato sauce, a pantry essential for multiple dishes. Approach this one as a foundational item, a simple star. Want some extra salt? add olives, or capers, need some heat? Chuck in the chilli, need something extra? Roast up some red onions…. Which ever way you go…our slow cook sauce has your back.
Ingredients: Plum tomatoes, onion, garlic, fresh oregano, red pepper flakes, extra virgin olive oil, salt, pepper

1 jar is 8oz
‘I have no time’: Warm up in a skillet, add the pasta, maybe a dollop of pesto or some almond ricotta and you’re good to go.
‘I have some time’: Heat through in a skillet, add the cooked pasta to sauce, add some chopped parsley or torn basil, a quick splash of olive oil, black pepper and salt to taste.
‘I have loads of time’: Roast some vegetables in the oven until they are nicely soft and caramelised. I love red onions for a simple add but you can use what’s seasonal, fennel is great as is asparagus.
Warm up the sauce in a skillet until it’s nice and warm. Once soft, add the roasted onions and stir until combined. If you want extra goodness, you can also swirl in fresh spinach as well as this will ‘melt’ into the sauce.
This sauce is now ready for you..add the pasta, filled or unfilled and you are good to go.
